Why hello there! My name is Francesca, shorten it however you please! I’m a British-Italian born and raised in London but whilst I adore Italian cuisine (I may be biased when I say it is the best in the world), I tend to mix things up in the kitchen and try dishes from all over!
I must confess, I only really started “cooking” per say when I flew the nest and went to University in 2009. Before then, I very much relied on my parents and grandparents to feed me on a daily basis. But hey…we all have to start somewhere! That somewhere for me was my first year halls at the University of Birmingham.
I made the conscious decision not to become the stereotypical “Studie” living off Pot Noodles (to this day I have not experienced those flavours) and by my second year I was really getting the hang of this whole cooking malarky.
Other than my family, I actually think my first real influence was Jamie Oliver and his 30 minute meals, which came out during my second year of Uni. I remember trying to plan my day around watching his programmes, making notes on the recipes and discussing them with my Mum. The show was always on just before dinner time, so I was always starving and ready to cook up a storm after! So that’s where I started to experiment and research different meals.
Since then, Jamie continues to play a huge role in my cooking, and I now find myself able to take his basic recipes and turn them into my own.
That’s the beauty of cooking – how many different recipes can you find to make a simple scrambled egg on toast, or the “Original Carbonara”. Cooking is about taking ingredients, and putting them together to make something great…albeit with some disasters along the way!
The Fat Files
You may ask why this name…and to tell the truth, it came about as a little joke during a holiday to Italy which essentially consisted of eating from the moment I arrived to the moment I left – I like food ok! People these days are so weary of the food they are eating, E-numbers, calories, this diet, that diet – and even though all these things shouldn’t be ignored, I am more about appreciating good food – even if that means consuming more than my daily recommended calorie allowance! Everything in moderation right? Except for cheat days…cheat days mean you can consume all the cake you want 🙂
I have never been much of a writer, but I am someone who likes to share knowledge with others, so the aim of this blog is not just to share my own recipes, but to provide eatery suggestions here, there and everywhere!
